- 2 Eggs
- 1 yolk
- 1/3 cup Brown Sugar
- 1/2 cup White Sugar
- 1/2 tsp Salt
- 2 tsp Cinnamon
- 1 tsp Ground Ginger
- 1/4 tsp Nutmeg
- 1/4 tsp Ground Cloves
- 1/8 tsp Ground Cardamom
- 1/2 tsp Lemon Zest
- Can of Pumpkin Purée (15 ounce)
- Can of Evaporated Milk (12 ounce)
- Frozen Pie Crust (9 inch)
Preheat oven at 425 degrees F.
Beat the eggs and the yolk in a large bowl. Mix in brown sugar, white sugar, salt, spices, and lemon zest.
Mix in pumpkin purée then stir in the evaporated milk.
Beat together until smooth.
Pour into frozen pie crust.
Bake for 15 minutes.
Reduce temperature to 350 degrees F and bake for another 45-55 minutes until the center is barely jiggly (the pie is ready when a knife come out clean).
Cool on wire rack for 2 hours.
And if you feel like it, add a touch of whipped cream, simply delicious!
